Build-your-own Fajitas

Tuesday night's menu called for Chicken Fajitas. I thawed, cut, and fried boneless skinless chicken breasts with fajita seasoning. I sauted the orange peppers and onions in the seasoning, but did them separately because Christian don't like onions. I used a 'Great Value' brand of Fajita Seasoning and although it taste good, it was way too salty... and we don't need that extra sodium in our diet. Next time I will either buy another brand or make the seasoning from scratch. I grated just a little cheese, shredded what lettuce we had left, and scooped out a heaping tablespoon of sour cream for each of us. The rice was simply Minute Rice with a little salsa and jarred pimentos stirred in. The corn was canned with pimentos added and some cajun seasoning mixed in. Both the rice and corn were tasty.

I served our plates as pictured above with the whole wheat tortillas on the side. Christian is independent and enjoys when we do 'build- your-own-meal' nights.

Most evenings Christian helps set the table. Last night while helping me I was very firm on explaining to him that what was on his plate was all that he got. He has the tendency (as do I) to glob on the sour cream and go get more... same as with the cheese. This time I was very clear that he didn't get any extras. It worked! He rationed his food much better than usual. He still had plenty to eat, ate slowly, and was clear of any reflux problems afterwards. :)

Ok so I have to admit that breakfast at our household during school days had been very rushed and not so healthy. I would always let Christian pick out the oh so common cereal box that we all see advertised on TV. I'd pour a heap of sugary cereal with 2% milk into a bowl and set it on the table. I've obviously been slacking and taking the easy, unhealthy way out. Breakfast is referred to as the most important meal of the day, but somehow I don't think that a bowl full of sugar is what they are talking about. Chocolate Pudding with Strawberries

Today was grocery day.  I shopped the sales fliers and came home with some lovely looking strawberries.  I knew they would go great with the Fat Free Jello Pudding that we already had in the pantry.  I prepared the pudding with 1% milk and spooned 1/2 cup into each dessert dish.  I washed and sliced the strawberries and layered them on top and lastly added a heaping tablespoon of cool whip on top.  A very simple and low fat, low cal dessert and oh boy was it ever delicious!  For dinner we had Pulled Pork Sandwiches with Coleslaw.  We tried Renee's Salad Dressing for the first time tonight and it was very good.  Overall our meal was about 4 carbs which was perfect!
