Back in the Saddle

It's a new year and we are firing the blog back up again!  Over the past months we've continued on our healthy eating quest and Christian's BMI continues to improve. It is not always easy though!  Staying on top of the game takes a lot of discipline, planning and creativity

We have fallen back into the breakfast cereal routine.  Between me having strep throat in Nov/Dec, the flu this month and then just simply being out of the routine... it's been hard to find energy in the morning to pull together a healthy breakfast.  No more excuses though!  Christian's acid reflux has been giving him issues again so it's time to get back in the saddle again.  Our Dietician, Leah, suggested we try fruit smoothies for breakfast.  So that's just what we are going to do.  We bought some frozen strawberries and raspberries and are all ready to go!

Lunches have gotten a little boring lately too.  They have gotten plain and very predictable with sandwiches being the main attraction paired with yogurt and a fruit.  Sure, it's still balanced, but just not appealing to Christian anymore.  Now, partial lunches are returning home at the end of the school day, especially grapes, apples and baby carrots.  A little chat with Christian revealed that he'd rather his apples cut into slices and also its tough because the other kids have "better" things in their lunchboxes like pudding and fruit roll-ups.  Christian understands that he cannot eat these things because of his acid reflux, but he is still just a kid and it's tough sometimes.  Right now, he is sitting in at his computer researching some recipe ideas that we can try out.  :)

We have also been trying to be more active.  Christian and I have started back up ice skating on Fridays.  Its free for an hour after school and a great fun!  We've all also got out sliding and plan to trying snowshoeing as well.  

I am looking forward to getting back in the swing of things with blog entries.  In a way, keeping a food blog had kept me more focused and I hope that it helps again.

I am always looking for new recipes and last month my cousin emailed me the link to Grilled Buttermilk Chicken. I've had fried chicken soaked in buttermilk before, but this was a leaner idea. It was very easy. Saturday morning I arranged the chicken in a shallow baking dish and marinaded them in the buttermilk mixture. I turned them occasionally until dinner time. Then Millard took care of the grilling. They turned out nice. I didn`t use as much garlic as was called for, but perhaps I could`ve. Grilled Buttermilk Chicken Serves 8 Hands-On Time: 10m Total Time: 1hr 50m Ingredients 1 1/2 cups buttermilk 8 cloves garlic, chopped 1 tablespoon paprika kosher salt and black pepper 6 pounds bone-in chicken pieces Directions In a small bowl or measuring cup, combine the buttermilk, garlic, paprika, 1½ teaspoons salt, and ¾ teaspoon pepper. Chocolate Pudding with Strawberries

Today was grocery day.  I shopped the sales fliers and came home with some lovely looking strawberries.  I knew they would go great with the Fat Free Jello Pudding that we already had in the pantry.  I prepared the pudding with 1% milk and spooned 1/2 cup into each dessert dish.  I washed and sliced the strawberries and layered them on top and lastly added a heaping tablespoon of cool whip on top.  A very simple and low fat, low cal dessert and oh boy was it ever delicious!  For dinner we had Pulled Pork Sandwiches with Coleslaw.  We tried Renee's Salad Dressing for the first time tonight and it was very good.  Overall our meal was about 4 carbs which was perfect!  

Teethering just a little, but I have an excuse!

This week has not worked out as planned. I have been sick. I am currently recovering from strep throat and although I hadn't been able to eat most of the week... the rest of the family needed to! The preplanned menu was tossed out and Millard was given the go-ahead to just do 'whatever'. We resorted back to cereal box breakfasts and canned soups, mac & cheese, and sandwiches were a quick easy fix for lunch and dinner. All in all I think we did good to get this far without any seriously greasy, deep-fried take-out. Our only take out meal was Subway... which doubled as dinner one night and lunch the next day. I am starting to feel better after seeing the doctor. I am back on my feet and ready to make a meal tonight. It is just going to be spaghetti & meatball with Millard's pre-made, frozen meatballs and a jar of Ragu. I am going to attempt to make a green salad to go with it, but who knows if I'll make it that far.
