Asian Grilled Drumsticks

Chicken drumsticks are always a hit at our kitchen table.  During grilling season we usually turn to bbq sauce, but this time I was on the hunt for an Asian dish.  I wish I had read thru the entire recipe early in the day and noticed that it was recommended to marinade the chicken for at least 8 hours.  Despite the fact that it only had 2.5 hours in the marinade mix, these drumsticks came out really tasty.  We will try this recipe as directed to see how it turns out.

 
Asian Grilled Drumsticks
 
1/4 cup soy sauce
1/3 cup fresh lemon juice
1/2 cup honey
1/4 cup sesame oil
2 tbsp garlic, minced
2 tbsp ginger, minced
2 tsp dried chili pepper flakes
black pepper
2 green onions, chopped
10 chicken drumsticks
1/4 cup peanut oil
seasoning salt
 
Whisk together soy sauce, lemon juice, honey, sesame oil, garlic, ginger, pepper flakes and pepper.
 
Add the green onions.
 
Put drumsticks in a large zip lock bag.  I find it helpful to fold the the edges of the bag down to keep the seal clean.  Then pour in the marinade and seal bag.
I reserved half the marinade for basting
 
Refrigerate for a miniumum of 8 hours, turning occasionally.
I did not read this part prior to making the recipe so our chicken only marinaded for 2.5 hours.
 
Remove chicken and discard the marinade.  Place chicken on a baking sheet, pat dry with paper towel
 
Rub the drumsticks with peanut oil on all sides
 
Season chicken with seasoned salt
(this step could easily be omitted)
 
Grill turning chicken until crispy golden brown and cooked thoroughly.

I am always looking for new recipes and last month my cousin emailed me the link to Grilled Buttermilk Chicken. I've had fried chicken soaked in buttermilk before, but this was a leaner idea. Teethering just a little, but I have an excuse!

This week has not worked out as planned. I have been sick. I am currently recovering from strep throat and although I hadn't been able to eat most of the week... the rest of the family needed to! The preplanned menu was tossed out and Millard was given the go-ahead to just do 'whatever'. We resorted back to cereal box breakfasts and canned soups, mac & cheese, and sandwiches were a quick easy fix for lunch and dinner. All in all I think we did good to get this far without any seriously greasy, deep-fried take-out. Our only take out meal was Subway... which doubled as dinner one night and lunch the next day. I am starting to feel better after seeing the doctor. I am back on my feet and ready to make a meal tonight. It is just going to be spaghetti & meatball with Millard's pre-made, frozen meatballs and a jar of Ragu. I am going to attempt to make a green salad to go with it, but who knows if I'll make it that far.
